Guacamole Dip

My friend Chris gave me this recipe - and I adjusted a little to my tastes (and what I had in the fridge!) This recipe is great to use in 7-layer dip, with quesadillas, tacos or with chips and salsa.

INGREDIENTS:
3 large avocados, cubed
1/2 small white onion, diced
1/2 (10 oz.) can of Rotel tomatoes with green chiles
1/4-1/2 cup sour cream
1/2  packet Splenda or 1 tsp. sugar
1 lime
fresh cilantro, chopped
pinch of taco seasoning
salt and pepper to taste

INSTRUCTIONS:
Mash avocados until smooth. Drain tomatoes and mix in 1/2 of can. Add in onions, sour cream, juice from lime and salt and pepper to taste. Stir in chopped cilantro (as much as you like) and refrigerate up to overnight.
