Shrimp Fettuccine with Pancetta & Mushrooms

This is a super yummy and really easy recipe to make... but it's great to pull out at parties to impress everyone. Serve with garlic bread and a green salad and you'll be the hostess with the mostess... Delish!

INGREDIENTS:

1.5 lbs. raw shrimp, peeled and deveined
2 cups sliced mushrooms
1 bunch green onions
3 cloves garlic
4 oz. pancetta
4 Tbsp. butter, melted
3/4 cup parmesan cheese
1/2 cup heavy cream
2 Tbsp. olive oil
pinch nutmeg
8 oz. fettuccine, uncooked

INSTRUCTIONS:
Prepare fettuccine according to package.  Drain pasta and toss with butter, cream, parmesan cheese, and nutmeg. Meanwhile, heat garlic in oil and add pancetta. Saute until it begins to brown. Add in mushrooms and green onions and saute for 3-4 minutes. Add in shrimp and continue to cook together until shrimp are pink and firm. (Should take no more than 5 minutes. Drain off any excess oil and  mix in with pasta. Top with additional parmesan cheese and serve while hot.  Serves about 5.
