Shrimp and Feta Cheese
INGREDIENTS:
1 large onion, chopped
1/2 cup olive oil
1 16 oz. can tomatoes, drained & chopped
1 tsp salt
2 Tbsp fresh cilantro, chopped
1/2 tsp dried red pepper flakes (adjust to your taste)
2 cloves minced garlic
1/2 lb. feta cheese
2 lbs. shrimp, peeled and deveined
1/4 cup vodka (optional)
INSTRUCTIONS:
Preheat oven to 350. Saute onion in oil until transparent. Add tomatoes, cilantro, salt, pepper flakes and garlic. Cover and simmer 40 minutes. Add shrimp to sauce. Pour into 3 quart baking dish. Crumble feta cheese over shrimp. Bake 10-15 minutes. Remove from oven. Pour heated vodka over shrimp and flame. Serve over rice. Serves 6-8.
