King Ranch Chicken
INGREDIENTS
1 medium onion, chopped
1 green pepper, chopped
3 Tbsps butter or margarine
2 cups chopped tomatoes
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
1/2 cup salsa/picante sauce
1 Tbsp chili powder
12 corn tortillas, cut into 1" strips
1.5 lb chicken - cooked & diced or shredded
3/4 cup shredded cheddar cheese
INSTRUCTIONS:
Cook onions and green peppers over medium heat. Add tomatoes, soups, salsa and chili powder and mix well. Line bottom of shallow dish with 1/2 of the tortilla strips. Top with half the chicken and half the vegetable mixture. Repeat. Sprinkle with cheese. Bake uncovered at 375 for 35 minutes. Let cool for 10 minutes. Garnish with sour cream.
